FIELD: food industry. SUBSTANCE: method involves the chromatography process use on at least three columns connected step-by-step order that is carried out by circulation of diluted molasses solution through columns. Molasses solution is fed onto one column and eluating water on the next one along with flow moving followed by betaine fraction withdrawal, sucrose and residual molasses solution from other columns. These processes are carried out at constant regime simultaneously. These procedures are repeated one or more times for one cycle. Parental molasses solution has temperature 40-85 C, flow rate is 0,5-10 m3/h/m2. EFFECT: improved method of preparing. 3 cl, 1 dwg, 8 tbl
