FIELD: meat industry. SUBSTANCE: mincer has frame 1, knife shaft 2, splined bushing 3, eccentric plates, knives 5, bushing 8, housing 10 and liquid supply chamber 14. Knives 5 have channels, and bushings 8 have longitudinal passage 9 connected with longitudinal channel of splined bushing 3. Mincer has system providing delivery of metered out amounts of liquid into meat processing rarefaction zones to improve quality of minced meat with simultaneously cooling minced meat and knife.
