FIELD: dairy industry. SUBSTANCE: method involves addition of bacterial concentrate of the strain Streptococcus thermophilus B-19 as a test-culture to analyzed sample in the form of an aqueous suspension prepared from dry preparation as measured 0.3 cm3 suspension per 10 cm3 analyzed milk. Result recording is carried out by indicator color change after 50-75 min incubation of analyzed sample at 45-48 C. To prepare an aqueous suspension test-culture its sublimated concentrated is added to sterile or boiled distilled water as measured 500-1000 ml. colony forming units (CFU) per 1 cm3 water.
