FIELD: food and confectionery industry. SUBSTANCE: composition is used for preparing vitaminized hard candy caramel enriched with β-carotene. Composition has granulated sugar, starch syrup, citric acid, aromatic essence and dye. Dye is a vitamin addition as microbiological carotene (provitamin A) in oil at the following ratio of components, wt.-%: granulated sugar 72.65-73.66; starch syrup 24.83-25.72; citric acid 0.56-0.61; aromatic essence 0.09, and microbiological carotene (provitamin A) in oil 0.9-0.93.
