FIELD: alcohol production. SUBSTANCE: method consists in measuring temperature of mash fed into a sealed vessel provided with vacuum pump and condensate collectors, determining with the help of table data boiling pressure of ethanol corresponding to measured temperature, isolating volatile components from the mash into a holder operated under pressure exceeding above determined pressure by 15-20%, and transferring these components by means of vacuum pump into collector. Then, after volatile components are removed, pressure in the vessel is lowered to the value of boiling pressure of ethanol and its vapors are pumped out into collector.
