FIELD: confectionery industry. SUBSTANCE: method involves mixing confectionery fat with filler. Then mixture is fed into apparatus with crushing member. Feeding speed of mixture provides content of air in it from 50 to 60%. Mixture is crushed up to size of particles equal to 5-10 microns at temperature 90-120 C. As crushing member two cylindrical surfaces are used, one of them, rotates, while the other, is immovable. Discharging of crushed mixture is carried out through outlet branch pipe in the form of spiral. EFFECT: higher efficiency. 3 tbl
