FIELD: food industry. SUBSTANCE: invention refers to methods of inspection of qualitative characteristics of by quantity of solid melting triglycerides in it and by their melting temperature. Selection of determined quantities of examined and check samples are carried out during process of inspection with specified amount of melting triglycerides and melting temperature, taken samples are cooled to 0 C, then thermoelectric heating of samples to full melting and analysis with subsequent establishment of indicator correlation with amount of melting triglycerides found by heat of their melting by differential heating curve are carried out. Indicator correlating with melting temperature of in which capacity point of bend of differential heating curve is used is found in addition. Melting heat of triglycerides is determined by tangent of inclination angle of same differential curve. Inspection of quality of is carried out with due account of both indicators.
