Activity of beef pepsin is inhibited by its exposition in 0.2 M solution of sodium-potassium phosphate buffer, pH = 7.6. Method is based on optimized physical-chemical conditions for analysis carrying out. Method ensures to determine chicken pepsin amount in the mixed preparations with beef pepsin "HT". Method does not require chicken pepsin as standard in analysis. EFFECT: improved method of pepsin assay. 2 tbl
