SUBSTANCE: standard dry substrate is dissolved in distilled water with concentration of dry substances equals to 11.1±1.0% at pH 6.5+0.1 and temperature 35.0+0.5 C. Solution is coagulated with solution of standard rennet or pepsin, or their mixed compositions and solution similar with composition of tested enzyme. Coagulation time is compared.
