FIELD: equipment for drying of fruits, mushrooms, fish, meat. SUBSTANCE: method involves double-staged drying process characterized by different density of heat energy supplied at different stages and by supplying air-vapor mixture worked out at one of stages; supplying oscillating energy with following forced feeding of drying agent at second final dehydration stage, with density of supplied heat energy being increased as compared to the first stage to intensify heat exchange process. Infrared radiation is used as heat energy and oscillation is provided by repeated interruption of radiation emission. Apparatus has two drying cabinets, airduct extending between drying cabinets, and fans. Drying cabinets are divided into drying chambers, each provided with infrared radiation emitter units and additional airduct. Grid-type pans with material to be preliminarily dried are mounted on horizontal frame.
