FIELD: fish industry. SUBSTANCE: method involves fish dressing, roe removal, sorting, roe screening, sorting screened caviar-grains, its washing, dry salting with common salt in amount from 3.5 to 4.5% to mass of salted caviar, draining down the brine, caviar canning, closing and pasteurizing. Novelty is the washing screened grains in water cooled solution of salt with concentration of 0.85-0.90% for 30 c, and further draining down the liquid for 8-10 min.
