FIELD: food industry.
SUBSTANCE: invention is related to food industry, and may be used in production of fish caviar. Method includes salting of preliminarily washed caviar grains, mixing them with vegetable oil and packing. Prior to salting prepared caviar grains are soaked for 7-10 minutes in salted solution of milk whey with addition of dry chitin or chitosan.
EFFECT: increase of caviar output with increase of its nutritive value.
