SUBSTANCE: fats and oils were emulsified in water and cyclodextrin is split with at least one α-amylase taken from that producing by microorganisms Aspergillus niger, Aspergillus oryzae, Bacillus polymyxa, amylase from pig pancreas, Bacillus coagulans and a-amylases from flavobacteria, and/or CTGase taken from that producing by bacteria of genus Bacillus, Klebsiella, Micrococcus and alkalophilic bacteria CTGase. a-Amylase is taken at amount 10-500 FAU/g cyclodextrin to be removed, CTGase is taken at amount 0.5-20 U/g cyclodextrin to be removed and enzymatic splitting is carried out at 25-55 C preferably.
