FIELD: food industry, pharmacy, polymers. SUBSTANCE: beet pulp is subjected for preparing that includes drying at 30-50 C, milling (particle size is 1-5 mm), swelling and washing out inert substances followed by once or two-fold extraction with water for 1-2 h at 85-95 C and hydromodulus = 1: (20-40), filtration, concentration of pectin extract and its drying at 30-70 C. EFFECT: increased yield, good gelling capability, decreased net cost, improved ecology and safety of process. 1 tbl
