FIELD: food and medicinal industry. SUBSTANCE: method involves hydrolysis of pectin-containing raw for 1-2 h at 45-60 C at ratio raw : acid solution = 1:(6-10) followed by separation and concentration of extract by ultrafiltration through the hollow-fiber membrane filter under pressure 0.12 MPa. Amaranth plant is a new source of pectin exhibiting good jelly property. EFFECT: improved method of pectin preparing. 1 tbl
