FIELD: food industry. SUBSTANCE: invention describes a method of preparing pectin involving treatment of pectin-containing raw with an extractant in the cavitation type device. Treatment is carried out with milk whey or lactic acid in rotor-pulsation device in a gap between stator and rotating rotor for 30-240 s, at hydromodulus = 1 : (5-15), at temperature 35-45 C and values of rate gradient from 4.6 x 105 to 5.8 x 105 m/s x m and ultrafiltration is carried out through a hollow-fibrous filter with filtration limit 15-100 kDa under pressure 0.08-0.12 MPa. The end product is a dry pectin powder with humidity 6%, its molecular mass is 20 000-300 000 Da. Method ensures to change technical acids used for extraction with milk whey.
