FIELD: microbiology, biotechnology. SUBSTANCE: yeast waste (content of dry matter is 20 weight %, not above) is digested with the use of food alkaline salt (sodium hydrocarbonate). Whole cells were separated from the extracted husks to obtain substance at high content of damaged cellular envelopes. The latter were treated with alkaline extracting agent and bleached by pH value decrease using diluted hydrochloric acid. Product has yeast beta-glucane without whole yeast cells but containing a lot of yeast cell residues. EFFECT: improved method of treatment. 9 cl, 5 dwg
