FIELD: technology of fish industry. SUBSTANCE: method involves separation of roe membranes by enzymic hydrolysis with using of extract of pyloric appendages of salmon family fishes with proteolytic activity 50-100 E per 1 l of extract. Enzymic hydrolysis is conducted for 10-30 min at 10-15 C in ratio extract: roe from (1:1.5) to (1:5). Then caviar is washed, separated from residue of membranes, salted, added antiseptics and packed. EFFECT: higher efficiency.
