FIELD: food industry, in particular, baking industry. SUBSTANCE: grain is washed, steeped and germinated. For that purpose, washed grain is poured by layer not more 15 cm, and poured out with water so that layer of water over grain surface equals 2-3 cm, for 18-24 h at temperature of water 15-20 C. During steeping water is changed 3-6 times and grain is mixed. Swelled grain is scattered on hard washing surface with a layer not more 5 cm for germination which is conducted for 22-26 h at temperature 18-25 C, then grain is ground to size of particles equals 0.5-1.0 mm, dough is kneaded.
