FIELD: food industry, biochemistry. SUBSTANCE: invention relates to method of preparing proteolysis inhibitor from soybean, rice and kidney beans waste. Crude soybean can be used also. Raw is milled, extracted with 1-% NaCl solution in 0.1 N HCl or 0.2-0.3 N $$$ at ratio = (1:3)-(1:9) at 10-30 C for 3-5 h followed by filtration. The end product as salt paste is obtained at 40-60% saturation with sodium chloride followed by separation by centrifugation. The obtained inhibitor of proteolysis shows activity with respect to serine proteinases (trypsin, chymotrypsin) and cysteine proteinases (ficin, bromelain, papain) and can be used for fish foodstuffs production at amount 6000-40000 antitrypsin units/1 kg raw.
