FIELD: fat-and-oil industry. SUBSTANCE: fractionation of fat composition containing fat glycerides' mixture into two or more fractions includes heating to a temperature at which all fatty glycerides are in liquid state, cooling liquefied fat composition to preset temperature at which a part of fatty glycerides are in the form of solid particles, and filtration of suspension obtained. According to invention, cooling is conducted with the rate at least 0.5 C/min to form suspension with crystals 0.1 to 50 mcm in size, which is subjected to dynamic microfiltration to give first crystal-free filtrate and first concentrate with high content of crystals. The first concentrate may also be further fractioned to give second filtrate and second concentrate, and the same procedure may be repeated with the second concentrate. To reduce bacteria's content in fat composition, the latter is heated to a temperature at which all fatty glycerides are in liquid state after which liquefied fat composition is subjected to dynamic microfiltration to give first filtrate with low content of microorganisms and first concentrate with higher microorganism level.
