FIELD: food processing industry.
SUBSTANCE: method for production of ubiquinone-enriched foodstuff includes ubiquinone dissolving in oil/fat under heating, wherein said oil/fat has melt temperature of at least 20°C. Further obtained mixture is solidified or plasticized, or converted to oil-in-water emulsion. Obtained mixture (emulsion) is added to food material. Alternatively oil/fat with melt temperature lower than 20°C is used. Also disclosed are ubiquinone-enriched foodstuffs obtained by abovementioned method and method for prevention and/or localization of ubiquinone precipitation in foodstuff.
EFFECT: foodstuff with uniform ubiquinone distribution; improved ubiquinone delivery.
