FIELD: chemistry.

SUBSTANCE: oil or fat composition, satisfying conditions (1)-(4): (1) oil or fat composition contains diacylglycerol in an amount around 20 mass % or more; (2) making up diacylglycerol fatty acids contain oleic acid in the amount of 30 mass % or more; (3) mass ratio of content of (B) 1,3-dipalmitindiacylglycerol to content of (A) 1,2-dipalmitindiacylglycerol [(B)/(A)] in diacylglycerol constitutes 1.45 or less; and (4) mass ratio of content of (D) 1,3-diacylglycerol to content of (C) 1,2-diacylglycerol [(D)/(C)] constitutes 1.2 or more.

EFFECT: present invention relates to oil or fat composition, rich in diacylglycerol with high content of oleic acid in components of fatty acids making up diacylglycerol, having good appearance at normal temperature.
