FIELD: food-processing, agricultural and medical industries. SUBSTANCE: method involves carrying out autolysis of yeast biomass, which is a pure yeast culture, in the presence of inducers: priming autolizer, ethanol and sodium chloride in four stages, with first stage being conducted at increased pressure and second, third and fourth stages being conducted at reduced pressure, and with stages differing one from another by temperature and time conditions; upon accomplishment of autolysis, conducting thermal sterilization in the same reactor for 20-30 min. Ready product may be treated by different methods. First version implies condensing of obtained liquid ready product without interrupting the process in the same reactor till required dry substance content is reached. According to other version, obtained product is subjected to drying. Citric acid is added into liquid and condensed ready product, ethanol is added into condensed product. It allows microbiological process purity to be provided, with discharge of amino acids, vitamins etc being maintained.
