FIELD: manufacture of machinery for food industry; concentration of liquid foodstuffs by evaporation under vacuum; applicable efficiently under conditions of small enterprises and household having no steam supply systems, for concentration by vacuum evaporation and rectification of liquid foodstuffs. SUBSTANCE: evaporator system has evaporation unit with water jacket, shell-and-tube condenser, ejector, electrical equipment cabinet with switch, fuse and starter. Cylindrical hotwell and evaporation unit are joined by frame on which hotwell is installed with its lower end and evaporation unit is suspended by hinges from two posts of frame. One post has retainer which provides for turning of evaporation unit from initial position through angle of about 180 deg and made in form of electrical equipment cabinet. Evaporation unit has tubular electric heater in water jacket lower part and sensitive element of reading and regulating thermometer is provided in water jacket upper part. Evaporation unit has upper flanged quick-detachable cover conical in shape with two opposite transparent windows in conical wall with pumping-out nipple in cone vertex. Hotwell upper part has pumping-out nipple, pressure equalizing screw, added-on ejector and concentrically installed condenser whose tubes are opened into space of hotwell. Lower branch pipe of intertubular space of condenser has valve for exterior connection with water pipeline and upper nipple of this space is connected with ejector nozzle. Condenser intake space formed by flange with nipple and combining tubes is connected by means of vacuum hose with pumping-out nipple of evaporation unit. Ejector inlet is connected with pumping-out nipple of hotwell. Ejector outlet nipple is directed towards funnel for draining of used water and located somewhat lower. Tubular electric heater is connected with power supply mains through starter and fuse. Cut in supply circuit of starter coil through fuse and switch are contacts of regulating thermometer and relay which are operating upon attaining the preset temperature.
