FIELD: food industry. SUBSTANCE: invention, in particular, relates to hydrolysis of pentosan-containing material to produce saccharide solutions that can be used, for example, to produce xylite. As starting material, brewing waste was utilized. In the first stage, brewing waste with natural moisture content is crushed on a disk mill for 1-5 s with vibration frequency 10-50 Hz and solid phase is then separated from fluid suspension using e.g. worm press. Suspension represents past enriched with protein, and solid phase with 40-50% moisture content looks like fibrous mass and is enriched with cellulose. In the second stage, solid phase is mixed with water at ratio 1: (3-5) and aged for 10-30 min at 140-160 C, whereupon solid phase is separated and hydrolyzed with 0.5-2.5% sulfuric acid for 2-4 h at 100-120 C. In such a way, pentosans do not undergo acid decomposition in the process of refining of vegetable raw material, portion of xylose increases from 57 (starting brewing waste) to 70-71% based on total content of saccharides, and arabinose content drops to 15.5-17%.
