FIELD: food industry.

SUBSTANCE: invention relates to food industry. Disclosed is a method for processing vegetable raw materials for preparation of xylose-containing hydrolysates, for production of xylitol, including hydrolysis of vegetable material with hydrogen chloride. To carry out hydrolysis, crushed vegetable raw material is saturated with hydrogen chloride from a gas-air mixture with concentration of 0.5–4.0 vol% hydrogen chloride. Desorption of hydrogen chloride from the resulting hydrolysate mass is carried out by purging with air. Gas-air mixture obtained during desorption with concentration of 0.5–4.0 vol% is cooled and used at the vegetable material saturation stage with the addition of fresh hydrogen chloride. Carbohydrates and oligosaccharides formed during hydrolysis of hemicelluloses are extracted from the hydrolysate mass. Further, the xylose-containing hydrolysate is inverted, neutralised, purified from non-carbohydrate components, xylose is crystallised, xylose is hydrogenated to xylitol, followed by purification and crystallisation of xylitol.

EFFECT: method simplifies the process of producing xylitol from hydrolysates.
