SUBSTANCE: method involves mixing fruit pulp with prepared Jerusalem artichoke tubers; treating mixture in microwave field to inactivate native polyphenoloxidase; producing pulp by ultrasonic treatment of mixture, with water steam being condensed at pressure exceeding atmospheric pressure, with following throttling of mixture under vacuum till dry substance content in mixture reaches 12-16% by weight.
