Hydrolysis is conducted by treating Jerusalem artichoke by electrically activated aqueous acid medium with predetermined characteristics and hydromodulus. Method allows products with increased fructose content to be obtained. This product may be used for treatment of patients suffering diabetes mellitus and obesity.
