FIELD: food-processing industry. SUBSTANCE: apparatus for processing food medium, such as milk, has pasteurizing surface, ultraviolet emitter, sprayer with supplying branch pipe and collector with discharge branch pipe. Pasteurizing surface is formed as flat rectangular plate positioned at an acute angle to horizontal plane, with angle of inclination being within the range of 5-90 deg. Ultraviolet emitter has tubular lamps and is positioned above plate in parallel with it. Sprayer has vessel with closed ends and bottom provided with openings for discharge of processed liquid. Sprayer is positioned above upper part of pasteurizing plate. Collector is formed as trough arranged above pasteurizing plate adjacent to processed liquid discharge point. Apparatus is further provided with device for stabilization of pressure of liquid under process in sprayer and drain troughs arranged at sides of pasteurizing plates. Apparatus may be made in the form of at least two pasteurizer cascades. EFFECT: increased efficiency, simplified construction and enhanced reliability in operation. 3 cl, 4 dwg
