FIELD: leather industry. SUBSTANCE: method of cooking flesh under pressure consists in loading raw material, feeding steam, and cooking flesh in rotary drum. The latter is thermally insulated and has internal shelves. In the ends of the drum, there are holes to feed steam under pressure 9.81-40.86 N/sq.cm (1-6 atm). Cooked system segregates and is drained to collect fat. Remaining material is vacuum dried in the drum under rotation. EFFECT: enhanced process efficiency. 2 cl, 1 dwg, 1 tbl
