FIELD: alcoholic beverage industry. SUBSTANCE: claimed method of production of ethanol using phosphorus compounds comprises preparing stock for fermentation, fermentation and subsequent recovery of ethanol. Phosphorus compounds include polyphosphoric acid salts selected from (a) mixture of pyrophosphate tetrasodium with urrole salt at 1:3 ratio; (b) polyphosphoric acid salt of general formula: $$$ wherein n is from 3 to 100, M is alkali or alkaline earth metal or ammonium ion. Said salts are added at stage for preparing stock for fermentation. The present invention makes it possible to increase yield of ethanol and biomass and cut down fermentation time.
