FIELD: alcohol-making industry. SUBSTANCE: method involves milling starch-containing raw, its mixing with water in the presence of amylolytic enzyme preparations and enzymes hydrolyzing nonpolysaccharide substances of grain, treatment of obtained suspension in rotary-pulsating device in gap between stator and revolving rotor followed by heat treatment of mass formed, saccharification of mass with saccharifying enzyme preparations, cooling mash obtained, its fermentation and rectification of mash formed. Milled raw is mixed with water in the mass ratio from 1:2.5 to 1:3. Treatment of suspension in rotary-pulsating device is carried out at rate gradient values from 1.8 x 105 m/s x m to 3.2 x 105 m/s x m, at temperature 53-57 C and heat exposition of formed mass is carried out at temperature 58-70 C. Invention allows to increase alcohol content in mature mash and enhance quality of ethyl alcohol. EFFECT: improved method of production of ethyl alcohol. 3 tbl, 14 ex
