FIELD: chemistry.
SUBSTANCE: method involves diluting molasses to carbohydrate content of 20 g/100 cm3 with phenol-grade geothermal water with overall mineral content of 2.1 g/l. Fermentation is carried out using yeast S. cerevisiae Y-503, which is cultured on a culture medium with phenol-grade geothermal water, which actively requires amino acids and mineral substances, which enables to intensify the ethanol synthesis process.
EFFECT: invention provides more complete fermentation of carbohydrates, increases content of alcohol in the wort and reduces the amount of impurity compounds.
