FIELD: technology of vegetable raw processing. SUBSTANCE: milk thistle (Silybum) fruits are milled by cold pressing and charged in extractor unit. Obtained syrup is poured with an aqueous-alcohol mixture 49-51 vol.% at ratio 1: 10 for 2-2.5 h. Then bubbling with air under pressure 1.2-1.4 atm for 50-60 min at interval 1.5-2 h and at total time 12-13 h is carried out. Suspension is settled for 1.0-1.5 h and liquid phase is decanted. Additional pressing out of cake is carried out by compressed air and extract volumes are combined. Invention can be used in food, perfume and cosmetic industry and in medicine. EFFECT: improved method of processing, increased yield of biologically active substances.
