FIELD: meat processing. SUBSTANCE: hog carcasses subjected to preslaughtered stress-factors are treated with acidic aerosol containing 2.0% of acetic acid, 1.0% of lactic acid, and 1.5% of orthophosphoric acid. Then electrostimulation of carcasses are carried out by electrostatic high-voltage system (200 V) for 60 s. EFFECT: increased keeping the quality of pork up to 90 days; reduced carcasses drying losses in 2.5 times.
