FIELD: meat industry. SUBSTANCE: the method suggests to treat meat with a salting mixture. The latter consists of the common salt: citric acid mixture at the following ratio of components, weight%: common salt - 94-96, citric acid - 4-6. On putting the meat into containers it should be poured over with melted fat of a slaughtered animal or poultry at mixture consumption being 9.5-10.5% and melted fat being 3-5% against meat weight.
