FIELD: production of food chitosan from shell of crustacea; may be used in fish-processing industry, food and microbiological industries, medicine, cosmetics, agriculture, etc. SUBSTANCE: for preparing food chitosan, chitin is transferred in active state by introduction it into 5-10-% solution of alkali and grinding the suspension in colloidal mill. Cooled alkali solution is added to ground suspension till its concentration in suspension reaches 35-45%; then suspension is aged, chitosan is separated and washed up to pH not higher 7.0, dried, ground and tabletted or encapsulated. Prepared food chitosan is maximum approximated to properties of undestroyed polymer with high sorption ability and it allows to use it as biologically active additive to food in order to regulate some functions of organism. EFFECT: higher biologically active food additive.
