FIELD: reprocessing of crab processing wastes. SUBSTANCE: method involves freezing out frozen raw material or material, not subjected to thermal treatment, in air; pressing in press-type separator; separating liquid fraction containing proteic substance, proteolytic and chitinolytic enzymes and fat from shell-containing pulp; subjecting liquid fraction to autolysis for 2-6 hours at temperature not in excess of 12 C with following centrifuging; providing additional cleaning of solution by separating and filtering through nutsch filter; stabilizing obtained enzyme preparation by sodium chloride (8-10% by weight of solution), or by antiseptics (sodium benzoate, benzoic or sorbic acid); holding at temperature not exceeding 4 C for less than 12 months, with enzyme preparation being further used for processing of shell-containing raw material; drying or preserving proteic sediment produced upon centrifuging of liquid fraction to obtain feed proteic flour or paste; washing shell-containing pulp with water at temperature of 15-25 C, with obtained mass being mixed for 10-20 min at pulp and water ratio of 1:4; holding washed pulp in enzyme preparation solution at temperature of 4-60 C for 1-24 hours at pulp and solution ratio of 1:1 - 1:1.5, with solution having pH value of 7.5-8.0, containing 1-10% of enzyme preparation by weight of raw material and proteolytic activity of 60-200 PU/g; performing enzymolysis, subjecting mass to centrifuging; directing deproteinized shells for decoloration and proteic dehydrolyzate for concentration and/or drying mixing deproteinized shell with oil of 60-70 C; holding mixture for 20-30 min at temperature of 50-70 C and cooling to room temperature.
