FIELD: food production industry. SUBSTANCE: this is intended for use in flour-grinding and cereals industry for processing millet grain into cereal. According to method, millet grain is cleaned from impurities. Then, it is subjected to hydrothermal treatment by moistening it with water to moisture content of 18.0-24.0%, softening during 9-12 h, drying at temperature of drying agent of 120-150 C during 3.5-4.5 min. After that, millet grain is subjected to dehulling and sorting by conventional procedure, and quality control of ready product is undertaken. Application of aforesaid method improves efficiency of millet grain dehulling due to reduced proportion of unhulled and crushed grains. Consumer properties of cereal are also improved. EFFECT: higher efficiency.
