FIELD: food industry.
SUBSTANCE: invention is related to flour-and-cereals industry. The method involves moistening millet grains or kernels moistening with water with vacuum build-up proceeding under a residual pressure of 0.05-0.07 MPa, water delivered into the grains or kernels during 10-60 sec. Then one performs the grains or kernels conditioning during 6-8 h. Then the grains or kernels are dried in a dryer at the drying medium temperature equal to 100-120°C.
EFFECT: invention allows to reduce the millet hydrothermal treatment process energy intensity as a result of decrease of energy costs associated with grains or kernels moistening and drying operations as well as to enhance millet processing products stability during storage due to enzymes activity reduction.
