FIELD: technology of biopolymers. SUBSTANCE: invention relates to producing porous texturates on the basis of animal fibrillar proteins using method of crytropic gel formation, i. e. by method of freezing-thawing of the parent system. Method of producing involves the following stages: protein raw is converted to an aqueous dispersion that is treated successively firstly to pH 2.5-4.0, then - to pH 4.5-5.5 or firstly to pH 2.5-4.0, then to pH 10.5-12.5 followed by to pH 7.0-10.0 and composition freezing. Proposed method ensures to use concentrated suspensions of fibrillar proteins of different origin. Method does not require any chemical reagents, except for acids and alkali. The end product exhibits homogeneous property and pH value maximally near to neutral one. Porous protein texturates can be used in biotechnology, cosmetology, medicine and food industry.
