FIELD: canned product industry. SUBSTANCE: method involves imparting film mode flow to product flow in centrifugal force field; supplying supersonic steam flows into film of product in direction oriented to axis of rotation of centrifugal force so that steam is condensed in product film; simultaneously exposing product to microwave electromagnetic field. Method allows product sterility to be provided under conditions of complete inactivation of native ferments. EFFECT: increased efficiency and improved quality of product.
