FIELD: medicine, food industry. SUBSTANCE: method involves extraction of Jerusalem artichoke tubers with water by countercurrent method in the presence of acetic acid to pH = 4.5-5.6 at 65-90 C followed by centrifugation, evaporation, condensate recovery to the process onset and inulin crystallization for two stages. At the first stage crystallization is carried out in water at 8-10 C and then precipitate is separated, dried and dissolved in 96% ethyl alcohol at 60-65 C. Then solution is cooled to 8-10 C, the end product is crystallized, separated and dried at 35-40 C. Inulin is used for preparing diagnostic agents and D-fructose producing. EFFECT: improved method of preparing.
