FIELD: food industry. SUBSTANCE: the parent raw - above-ground amaranthus herb is soaked in water at ratio = 1:(1-3) by volume, kept at the room temperature for 1-2 h, swollen raw is filtered and loaded into extractor. Process is carried out by continuous countercurrent extraction with sodium hydroxide aqueous solution at pH 8.5-10.0 at hydromodulus 1:(8-10) and continuous reciprocal motion of extractant in extractor at frequency 1-20 cycles per a minute at 30-45 C. Extraction time is 20-40 min. The end product is precipitated with CH3COOH at pH 3.9-4.5. EFFECT: increased extraction of protein, improved quality. 1 tbl, 13 ex
