FIELD: dairy industry. SUBSTANCE: invention is a consortium of lactic acid rods and yeasts that can be used for kumiss making, ferment and bacterial preparations. Consortium is obtained by combination of three strains of lactic acid rods - Lactobacillus acidophilus A-41, Lactobacillus delbruockii sub. bulgaricus B-21 and a strain of lactofermenting yeast Saccharomyces lactis S-11. This consortium ferments milk for 4-6 h after addition 5% ferment and at 37-38 C to acidity 70-80 deg T. Consortium shows antagonistic activity, resistance to phenol, bile, sodium chloride and antibiotics. Kumiss obtained by using this consortium shows the enhanced antibiological activity and has hundred millions of acidophilic and bulgarian rods in 1 ml and hundred thousands of yeast cells in 1 ml.
