FIELD: food-processing industry, in particular, milk and juice concentration equipment. SUBSTANCE: apparatus has sectioned housing, perforated rotor mounted on hollow drive shaft within housing and provided with perforated shells defining hydraulic gates relative to rotor ends. Apparatus is further provided with perforated stator positioned so as to embrace rotor, and liquid product and gaseous heat-carrier supply branch pipes, concentrate discharge branch pipe and exhaust branch pipe. Rotor and shell perforations are formed as Laval nozzles. EFFECT: simplified construction and reduced power consumption. 2 cl, 2 dwg
