FIELD: dairy industry; may be used for production of cultured milk products with additives. SUBSTANCE: fat-free or reconstituted fat-free milk is mixed with stabilizer and saccharose. Refined vegetable oil (sunflower or corn oil) with peroxide number not higher 10 1/2 0 mmole/kg is introduced in mixture in stream. Before homogenization, mixing is conducted with oil consumption of 14-26 g/h per 1 t of prepared product. Homogenization is conducted in two stages. Pressure at the first stage is 14-16 MPa, while on the second, not less 20 MPa. Mixture is pasteurized, cooled and soured with 3-5% of sour for yoghurt, and then mixture is soured, cooled and prepacked. Ratio of vegetable oil to dry fat-free milk is 14-26:101-161. "Multek-Tech-MM" is used as stabilizer which is introduced in the amount of 0.65-0.75 mas. %. Saccharose is added in the amount not less 6.5 mas.%.
