FIELD: dairy industry; may be used for production of milk products with additives. SUBSTANCE: fat-free or reconstituted fat-free milk is mixed in stream with refined vegetable oil with peroxide number not higher 10 1/2 0 mmole/kg. For this purpose sunflower or corn oil is used. Before homogenization, mixing is conducted with oil consumption of 14-36 kg/h per 1 t of prepared product. Homogenization is conducted in two stages. Pressure at the first stage is 14-16 MPa, while on the second, not less 20 MPa. Ratio of oil to dry fat-free milk is 14-36:88-90. After homogenization milk is pasteurized and then sterilized for preparing product with prolonged storage life. Before sterilization, salts-stabilizers may be introduced.
