FIELD: brewing. SUBSTANCE: nutrient additive containing diammonium phosphate, zinc and manganese sulfates and also magnesium sulfate, calcium chloride and vitamin additive in the form of preliminarily prepared yeast autolyzate is added to wort. Mixture is made in the form of complex autolyzate (hydrolyzate) compounds with above-indicated biogenic metals with specified contents of principal elements per 1.0 g of solid mixture having moisture content 10%. Aside from it, zinc sulfate can be introduced into additive in the form of complex compound with methionine and manganese sulfate as that with glycine. Nutrient additive for brewer's yeast is prepared through hydrolysis of yeast suspension at its initial moisture content 85-90% and temperature 43-50 C for 5-10 hr in presence of enzyme preparation in amount 30 to 70 mg per 1 l of yeast suspension. After the end of hydrolysis, zinc, manganese, and magnesium sulfates, calcium chloride, and diammonium phosphate are successively added at stirring to yield homogeneous product capable of being dried. Bear production process includes preliminarily dissolving additive in liquid medium and adding it to main part of cooled wort at usual specified proportion. Addition is carried out portionwise applying stirring before adding each portion to the stream of cooled wort.
